Ingredients
Michelle’s Meat Sauce:
2 pounds ground turkey
1 pint of sliced mushrooms
1 chopped onion
lots of oregano and garlic salt to taste
1 large can of Ragu’ thick and chunky
1 can of tomato sauce
2 cans of tomato paste
Red Wine Vinegar
Salt
Stevia packets
Michelle's Baked Spaghetti:
Meat Sauce
2 packages of the Palmini noodles
mozzarella cheese
Sweet Potato Lasagna:
Meat sauce
2 large sweet potatoes sliced, about 1/4-inch slices or thinner
1 cup low-fat or fat-free cottage cheese
1 egg
1/2 cup shredded parmesan cheese
Mozzarella to your liking
Preparation
Michelle's Meat Sauce:
Step 1:
Brown meat and cook veggies (I chop the mushrooms up with spatula
while they are cooking). Add spices and all other ingredients, tasting as you go.
Step 2:
I add two cans of tomato paste because I like it thick.
Step 3:
I add red wine vinegar and Stevia to taste. Salt and pepper to taste. Let simmer and there you have it!
Michelle's Baked Spaghetti:
Step 1:
Grease 8 x 8 (or you can double in a 9x13), and preheat oven to 350.
Step 2:
I put two packages of the Palmini noodles in the bottom of an 8 x 8 (or you can double in a 9x13) and cover it with sauce and mozzarella cheese.
Step 3:
Cover with tinfoil and bake at 350 for about 30 minutes. Remove tinfoil, broil for a few minutes, so the cheese can get toasted on top.
Sweet Potato Lasagna:
Step 1:
Preheat oven to 375 degrees. Spray 9x13 baking dish with cooking spray.
Step 2:
Mix cottage cheese and egg. Set aside.
Step 3:
Layer 1: sweet potato slices Layer 2: meat sauce (half) Layer 3: cottage cheese mixture, all of it. 5. Repeat the layers of sweet potato, meat sauce, and top with parmesan or low-fat mozzarella.
Step 4:
Cover with tin foil and bake for 1 hour.
Step 5:
Uncover and broil for 3-5 minutes to toast cheese on top.
Step 6:
Remove from oven and let cool 15 minutes before serving.
